What espresso actually is
Pressure, ratio and why espresso tastes so concentrated.
Espresso is coffee brewed with pressure through a tightly packed bed of fine grounds. That pressure extracts oils and sugars quickly, so a small change in grind or time shows up in the cup.
In this course we measure three things on every shot: how much coffee goes in, how much espresso comes out, and how long it takes.
