Dose, yield and time

The three numbers behind every shot and how they relate.

Dose is the dry coffee in the basket, yield is the liquid espresso in the cup, and time runs from pressing the button to stopping the shot. Most recipes start at a 1:2 ratio: 18 g in, 36 g out.

Write all three down for every shot. When something tastes off, these numbers tell you what to change.
