For anyone curious how a café dials in: 19 g in, 42 g out, 27 to 29 seconds, recalibrated every morning and after lunch. We taste every recalibration shot straight and in milk.

    Rinse your paper filter with hot water first. It changes more than you’d think.

    Drop the temperature a degree or two and see if the harshness goes away.

    I had the same thing with this coffee. A slightly longer ratio fixed it.

    I’d go finer before changing the ratio. Sour plus fast is usually a grind problem.
