During the morning rush my doses drift by almost a gram. Do you weigh every shot on bar, or trust the grinder timer?

    Try going two steps finer and keep everything else the same. Change one thing at a time.

    Rinse your paper filter with hot water first. It changes more than you’d think.

    Write it down! Logging every change made dialing in so much easier for me.

    I had the same thing with this coffee. A slightly longer ratio fixed it.

    I’d go finer before changing the ratio. Sour plus fast is usually a grind problem.

    Drop the temperature a degree or two and see if the harshness goes away.
